I have played multiple hardware & software synths with multiple wind midi controllers. In my opinion, the best combi is Roland SE-02 and Berglund NuRAD.
Roland SE-02 is a wonderfully sounding analog mono synth. With CV input and breath cc mapped to volume, it give the best expression and dynamic from EWI playing.
